ingredients (serving 4)
- 2-3 Zucchini
- 1 large onion
- 2 cloves of garlic
- 3 bell peppers
- 1 bag of Rösti (small potato bits) (or replace with 500 gr shoarma)
- 200 gr Crème fraiche
- 1 bag of grated cheese
- 1-2 TB smoked (!!!) paprika
- 1-2 TS cayenne
- Salt & pepper
- (or add garlic powder if you forget to put in the garlic like moi)
Instructions
- Put a large pot with water on the stove, bring it to a boil. Preheat the oven to 200 degrees Celsius.
- Cut the onions and garlic in small pieces, cut the bell peppers in somewhat longer strips (I like that texture)
- Fry the onion, after a minute or 2 add the garlic. Add the bell pepper and fry on a medium to (quite) high heat – make sure to get some colour (i.e. brown to black spots) on your vegetables.
- Add the spices, except the salt. Then add the potatoes and salt to taste. Fry until (almost) done.
- Add the crème fraiche and heat through.
- (meanwhile) Half and hollow out the zucchini. Use a spoon for this!
- Boil the zucchini for 3 minutes (don’t do it any longer or it will overcook in the oven!!!)
- Fill the zucchini with the vegetable filling and top with the cheese
- Bake in the oven until cheese has melted (about 10-15 minutes)
