Sodexo is out, Appèl is in. After completing a European tendering process today, the UT signed the catering contract with Appèl for at least seven years. The company plans to apply their FoodCity concept at the campus, which means that several food stations will be established at the university.
Existing campus restaurants will be modified and in some cases even fully renovated by Appèl, the UT states in a press release. Each one of them will have its own ‘distinctive character’ and the result will ‘include various food courts, a pop-up store, an Italian restaurant and a student bar’. The modifications and renovations of the restaurants will take place during the summer holidays.
The new caterer was selected through a tendering process. The choice was also based on the wishes and needs of the UT community. For example, the university carried out an extensive survey and in September 2017 it organized a Food Market at O&O square, where potential candidates could showcase their products. A number of ‘kitchen table sessions’ were also held and the UT management was presented with their results, which included focus on internationalization, inclusion of different food cultures, hot meals, products for quick sales, fresh soups and salads, and more vegetarian options.
